Epic cornbread

Here’s another decadent dish for you! Also from labor day weekend away with friends. It started out as simple cornbread, but became so much more!

So here’s the story…

My friends and I decided that since it was the end of the summer we should do a big BBQ. And what goes better with BBQ than cornbread? So we went out to the store and bought what I think is the best cornbread mix, Jiffy. I’m sure you’ve seen it… it’s the one that comes in the old school blue box. Seriously, it’s the best mix.

As it turns out, this BBQ was also the night before we were all leaving and so one of our other goals was to finish as much food in the fridge as possible. Some of this food included corn on the cob, green chilies, bell peppers, and shredded mexican cheese.

I’m not going to belabor this post because I want you to understand how easy it is to make epic cornbread. All you do is prepare Jiffy mix according to the box directions and add corn, diced chilies, diced peppers, and cheese. Pour mix into cast iron skillet that has been liberally buttered (I’m told you can also use bacon grease for the skillet) and bake according to box directions.
